Gluten-Free Chopped Apple Salad

With its light sweetness and refreshing crunch, this Gluten-Free Chopped Apple Salad truly hits the spot. It's easy to prepare, making it perfect the perfect addition to summer potlucks (the autumnal flavors make it an ideal fall side dish as well). Whether served as a side dish or a light meal on its own, this salad is sure to be a hit at any gathering.

Ingredients
  

  • 4 large apples cored and chopped into large chunks
  • 1 lemon juiced
  • cup gluten-free mayonnaise*
  • tablespoons brown sugar
  • 2 stalks celery thinly sliced
  • ¾ cup seedless red grapes halved
  • ½ cup pecans roughly chopped
  • ½ cup raisins

Method
 

  1. In a medium bowl, toss together apple chunks and lemon juice.
  2. In a large bowl, add mayonnaise and brown sugar; whisk until sugar dissolves.
  3. Add the apple-juice mix, celery, grapes, pecans, and raisins. Stir to coat.
  4. Cover and refrigerate at least an hour before serving. Enjoy!

Notes

*I use Hellman's Light Mayonnaise which carries a gluten-free label.
