This delightful side dish quickly became one of my favorites. I started experimenting with different variations a few months back when I discovered Jimmy’s Pineapple ColeSlaw Dressing. The creamy, gluten-free dressing is wonderfully sweet and boasts delectable chunks of pineapple.


It’s incredibly easy to make because the dressing is premade. I tossed in a little leftover bacon, Fisher Toasted Sliced Almonds, and red onion to make it my own (my recipe variation is below). It is a great accompaniment to sandwiches and would be perfect with grilled pork chops this summer. Enjoy!

Easy Pineapple Bacon Slaw
Ingredients
Method
- In a large bowl, add bagged coleslaw mix, almonds, and red onion. Mix well.
- Pour half the jar of Jimmy's Dressing over the coleslaw mixture. Stir until evenly coated with dressing.
- Scoop the slaw into a serving bowl and top with bacon. Refrigerate at least one hour before serving.
