Easy Pineapple Bacon Slaw

This delightful side dish quickly became one of my favorites. I started experimenting with different variations a few months back when I discovered Jimmy’s Pineapple ColeSlaw Dressing. The creamy, gluten-free dressing is wonderfully sweet and boasts delectable chunks of pineapple.

It’s incredibly easy to make because the dressing is premade. I tossed in a little leftover bacon, Fisher Toasted Sliced Almonds, and red onion to make it my own (my recipe variation is below). It is a great accompaniment to sandwiches and would be perfect with grilled pork chops this summer. Enjoy!

Easy Pineapple Bacon Slaw

This delicious slaw is incredibly easy to make because the dressing is premade. It is a great accompaniment to sandwiches and would be perfect with grilled pork chops.
Servings: 4
Course: Salad, Side Dish

Ingredients
  

  • 8 ounce bagged coleslaw mix
  • ¼ cup toasted sliced almonds
  • cup red onion chopped
  • ½ jar Jimmy's Pineapple ColeSlaw Dressing
  • 3-4 slices cooked bacon chopped

Method
 

  1. In a large bowl, add bagged coleslaw mix, almonds, and red onion. Mix well.
  2. Pour half the jar of Jimmy's Dressing over the coleslaw mixture. Stir until evenly coated with dressing.
  3. Scoop the slaw into a serving bowl and top with bacon. Refrigerate at least one hour before serving.

Notes

If you purchase a larger size bag of coleslaw mix, be sure to increase your add-ins and dressing as needed.
