Apple Gorgonzola Slaw

I crafted this coleslaw recipe as the perfect accompaniment to juicy grilled turkey burgers, capturing the essence of Thanksgiving with a creamy Gorgonzola twist. For those unfamiliar with gorgonzola, it offers a milder flavor compared to other blue cheeses. Personally, I prefer using the gluten-free AmaGorg Gorgonzola Crumbles in this recipe.

Apple Gorgonzola Slaw

Serve this slaw with grilled turkey burgers as a delightful warm-weather nod to Thanksgiving.
Servings: 6
Course: Salad, Side Dish

Ingredients
  

  • 6 cups cabbage thinly sliced
  • 1 apple thinly sliced
  • ¼ cup dried cranberries
  • ½ cup pecans coarsely chopped
  • 1 cup Gorgonzola cheese crumbled
Dressing
  • ¼ cup apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey

Method
 

  1. Whisk dressing ingredients together in a small bowl until combined; set aside.
  2. In a large bowl, add cabbage, sliced apple, cranberries, and pecans. Mix well.
  3. Add dressing to cabbage; stir until coated.
  4. Pour Gorgonzola crumbles over slaw mix; gently combine.
  5. Scoop the slaw into a serving bowl. Refrigerate at least one hour before serving.

Notes

I used one 14 oz. package of Classic Coleslaw from Aldi to make this recipe.
